Don’t get me wrong I love a fancy meal as much as the next girl, however reality sets in and we all have to take a short cut or two. Hence my leftover faux beef stroganoff that I adopted from a recipe on Food.com.
Last night I took a big step forward in my solo cooking adventure… I prepared a roast beef dinner for little old me complete with Yorkshire pudding. There is nothing more comforting than a roast dinner on a Sunday evening, and after weeks of being ill it seemed liked the perfect dinner. The tiny 2 lb. standing rib roast I purchased did not disappoint. Today looking at my leftovers I was a little stumped and a little lazy after writing and editing all day, when I settled on my faux beef stroganoff and smashed garlic potatoes. It is fairly quick, ingredients were on hand, and this two pot wonder reheats nicely at lunch.
To begin sauté 1 cup of finely chopped onions in olive oil. Once the onions soften add in 2 cloves of garlic minced (hello garlic press!). Then add in 2 cups of sliced mushrooms, I used crimini but white will do just fine. Now here comes the cheat.. Add in 1 can of cream of mushroom soup, 1 tbsp of tomato paste, 1/2 cup milk, 1 tbsp of worcestershire sauce, sprinkle of smoked paprika and pepper. Bring to a boil and then allow to simmer. I generally allow to simmer for about 15 minutes for the flavors to blend and mellow. About 5 minutes before you are ready to serve add in the slices of beef, I don’t like to add the beef too soon to wreck the rareness of my yummy roast.
In the meantime boil a pot of water for the potatoes. I paired this with what I call smashed potatoes, what are those you may ask? Simply a lazy version of mashed potatoes. I use small potatoes, cut in half. Boil till tender, the add some butter and a dash of milk and mash.
Now check the seasoning of the beef mixture, adding in 1 tbsp of sour cream. Plate the potatoes and generously spoon the beef over. Sprinkle with some parsley and enjoy this take on an old classic. Keep in mind you can make this as healthy or as rich as you like, I use low sodium soup, skim milk, and low fat sour cream.
