Given it’s the end of July most people are thinking more BBQ and fresh salads and less freezer meals (me included).. so maybe bookmark this post and come back to it on a chilly November Sunday.
While I’ve been fairly absent from the kitchen the past few months when I have managed some energy to cook it has been large quantities of freezer meals for T. He has been working away on a northern job site and only gets home about 3 days a month. Yes that’s been our life since March. To show my love (and contribution to our relationship) I like to make meals for him, so when he comes home after a horribly long day there are meals waiting for him. Some worked, some didn’t, but since I’m still not cooking all that much I thought I’d share a few of my favorite recipes that froze well and made me look like a good wife 😉
Ziti and Meatballs from Real Simple.. The meatballs and sauce can be frozen separately. Just boil some pasta and dinner served. I used half beef/half pork for a leaner mix.
Chicken Risotto Cake.. This was a huge hit and froze very well. The individual servings made it easy and quick to heat up, and was equally good cold as a lunch.
Pork goulash.. I modified this recipe and used pork shoulder instead of the expensive pork tenderloin suggested, which worked very well I just let it simmer longer. And I did not bother with the dumplings, just a little too much effort at the time!
Tomato, Broccoli, and Mozzarella Pasta Casserole.. The title sounds yummy, however first reading the ingredients I did a double take when I read a can of chick peas! That’s right chick peas. Kind of bizarre right?!? I decided to give this a try since I had everything on hand and needed a few extra meals for T. As the description warns it isn’t a gooey, cheesy casserole but it is filled with lots of veggie and made for a tasty meal.
Macaroni and cheese.. Good classic recipe from Martha Stewart can’t go wrong really!
